Director Tobe Finch brings 25+ years of industry experience to Happy Day Catering’s operation. From earning a University of Idaho Public Relations degree in 1992 to managing multiple Happy Day Corporation restaurants, his many experiences have allowed him to expand Catering into a commanding stand-alone entity and large regional presence. Tobe exudes commitment to the community and his industry by being an active board member of the local Boys & Girls Club, as well as the 2016 chairman and long-time board member of the International Caterers Association and ICA Education Foundation, among other local and national organizations. Tobe is always seeking to maintain and grow the standards of excellence for which HDC is known, and he welcomes new events, ideas, and challenges to bring the best services in the industry to our clients.
General Manager Felipe Martins comes to Happy Day Catering by way of Brasilia, Brazil, having relocated with his wife to the LC Valley in early 2016. Felipe’s demonstrated leadership allowed him to quickly transition at HDC from Event Producer to General Manager. His unique and hands-on leadership style is based on a natural understanding of business as well as the insights gathered from years working with diverse populations abroad. These skills refine all of our human resource and internal processes so that your events are properly staffed with the greatest service in the region.
Administrative Assistant Savannah Ottmar has been bringing her organizational savvy to the Happy Day Catering sales office and Accounts Receivable department since 2017. Savannah is a 2013 liberal arts graduate of The College of Idaho with concentrations in History, Religion, and German. There she sharpened the communication skills, efficiency, and the detail accuracy integral to the smooth administrative operation of a business. Savannah is delighted to be a part of the Happy Day office team and looks forward to helping new and returning clients with all of their needs.
Kitchen Manager Sam Fulton is the newest member of the HDC team, bringing 12 years of professional experience to our catering operation. Her kitchen management skills were sharpened while directing food service at a large local casino and event center. Sam’s strong leadership, culinary knowledge, and organizational acumen mean the HDC kitchen consistently produces unique and high quality products fit for any of your special occasions.
Sales & Event Director
Sales and Event Director Alicia Finch brings a valuable trove of experience to event production at Happy Day Catering. She is a 1993 Washington State University graduate with a degree in Business & Merchandising and has subsequently designed and coordinated countless weddings and galas, corporate and business events, dinner parties and anniversary celebrations. Her expert eye and attentive planning from conception to execution help to make all your events as extravagant or as intimate as you want them to be. Alicia and the HDC team are sure to add that extra special touch to all your biggest days.
A native of the LC Valley, Event Coordinator Meghan Jeffreys graduated in 2008 from the University of Idaho with a degree in Journalism. She honed her industry skills for seven years at high-end restaurants and resorts in Maui, HI, that would translate smoothly into the event production business. She returned to Lewiston in 2016 and quickly made her mark at Happy Day Catering. Meghan's enthusiasm for the trade, consummate professionalism, and high attention to detail make every wedding and party the unique event it should be.
Event Producer Porsha Gilman joined both our events team and sales department in 2017. Porsha is a 2015 WSU graduate in Social Sciences with Business, Economics, and Human Development concentrations. She is glad to offer her efficient service and high enthusiasm as Event Producer, creating positive relationships with clients at every step of the event planning process. Rely on her knowledge, problem solving, and professionalism to ensure your event will run effortlessly and beyond expectations.
Warehouse Manager Paul Thomas brings an inexhaustible supply of energy and know-how to Happy Day Catering’s Maintenance & Operations team. HDC counts on Paul for tasks as diverse as heading off logistical issues in the lead-up to an event, building custom bars or buffet stations from scratch, and repairing each malfunctioning appliance our kitchen may hand him along the way. Paul's leadership of maintenance operations smoothly facilitates all those hidden details that allow us to bring you, the client, the best events possible.
